Everyone has been raving about the Watermelon and Strawberry Cake from the Black Star Pastry café located in Newtown. I see mouth watering photos of this cake displayed on Instagram. Even one of my teachers from school brought this cake for his mothers birthday and mentioned how stunning and delicious it was. Finally the time had come for me to see what all the fuss was about when mum surprised me with one on my 18th birthday.
I could not believe my eyes. It looked spectacular and the chocolate emblem displaying my name made it even more special. The top of the cake is decorated with strawberries, pistachios, dried rose petals and red grapes. The vibrant colours consisting of red, purple and green added to the beautiful presentation. It is quite a unique dessert perfect in the summer time. It includes six layers consisting of watermelon, an almond dacquoise and a rose-scented cream.
I actually came across the recipe in the Gourmet Traveller Magazine and I am dying to make it once watermelons are in season! The cream hinted with rose water provided the cake with a light sweet element that worked well with the juicy slices of fruit. I found the almond dacquoise interesting. The nutty flavour and chewy consistency was that of a macaroon.
I would classify this dessert as Mediterranean and each bite reminded me of Turkish Delight and Baklava. Both dad and I love rose water and enjoyed this cake, which could be treated as a dessert. A special treat on a hot summer’s day!
My 18th birthday will always be one to remember. Congratulations to my dad who had a heart and kidney transplant 23 years ago and promised to celebrate my special day with me. It is always a pleasure sharing my birthday with my Nanna and spending time with loved ones. I was very spoilt, especially with my Watermelon and Strawberry Cake.
