The beauty about a jam slice is that you can adjust the flavours to suit your preferences. You could pair apricot with almonds, blueberry with lemon, date with walnut, the list goes on. Coconut along with raspberry jam is particularly used in a traditional slice. The other day I made a coconut and macadamia slice sandwiched with my homemade rhubarb and strawberry conserve. Here is a starting point for you to invent your own flavour combinations.

Ingredients
  1. • 150g unsalted butter
  2. • 1 cup caster sugar
  3. • 1 tsp. vanilla extract
  4. • 3 eggs
  5. • 120g macadamias (1 packet) roughly chopped and toasted.
  6. • 1 cup plain flour
  7. • 1 cup self raising flour
  8. • 1 ½ cup jam
  9. • 2 ½ cups of desiccated coconut
Instructions
  1. 1. Preheat oven to 180°C and line a lamington/ slice pan with baking paper.
  2. 2. In a large bowl combine butter, ½ cup sugar and vanilla until light and fluffy.
  3. 3. Add one egg and mix until well combined.
  4. 4. Beat in the flour until mixture forms a sticky dough.
  5. 5. Fold in macadamias.
  6. 6. Press mixture into base of prepared pan. Bake for approximately 15 to 20 minutes or until lightly golden.
  7. 7. Transfer onto wire rack. Spread jam over warm base.
  8. 8. In a medium bowl whisk the remaining 2 eggs, ½ sugar and 2 cups of desiccated coconut until well combined.
  9. 9. Spread over jam. (If the mixture is too difficult to spread evenly, dip a knife in hot water and smooth down)
  10. 10. Scatter the remaining ½ cup desiccated coconut on top of slice.
  11. 11. Bake for approximately 20-25 minutes or until golden.
  12. 12. Cool on wire rack.
  13. 13. Cut into pieces, serve and enjoy!
