Marco Pierre White stated that cooking with confidence is the key to hosting a dinner party and I couldn’t agree with him more. As a family we are constantly on the lookout for dishes that will impress however in the end it is always the old favourites that do us justice. These passionfruit biscuits are at the top of our repertoire. They are light, citrusy and will leave your guests wanting more!

Biscuits
  1. 250g unsalted butter
  2. 1/2 cup caster sugar
  3. 2 cups self raising flour
  4. Zest from 1 lemon
Icing
  1. 2 cups soft icing sugar
  2. 3 passionfruit
  3. Juice from 1 lemon
Instructions
  1. 1. Preheat oven to 180 °C and line two trays with baking paper.
  2. 2. In a large bowl cream the butter and sugar until light and fluffy.
  3. 3. Sift the flour into the bowl, add the zest and mix until well combined.
  4. 4. Roll approximately a teaspoon of the mixture into round balls and slightly flatten each ball onto the prepared baking trays, leaving room for expansion.
  5. 5. Cook for approximately 10-15 minutes or until lightly golden.
  6. 6.Transfer biscuits onto a wire rack to cool completely.
  7. 7.To make icing combine ingredients in a large bowl and mix well.
  8. 8. Either pipe or use a knife to generously coat biscuits in icing. Enjoy!
