Puddings
  1. 1/2 cup golden syrup
  2. 125g unsalted butter
  3. 1 cup brown sugar
  4. 1 tbsp. dutch cinnamon
  5. 2 eggs (preferably free-range organic)
  6. 1 1/2 cups dried dates, finely chopped
  7. 2 cups self-raising flour
  8. 1 tsp. bi-carb soda
  9. 1 cup milk
Butterscotch Sauce
  1. 165g brown sugar
  2. 300ml cream
  3. 80g butter
Accompaniments
  1. Cream or vanilla ice cream
Instructions
  1. 1. Preheat fan-forced oven to 180°C. Grease 6-8 muffin tins or a 20cm round cake pan with butter. Line the cake pan with baking paper and for the muffin tins, lightly dust moulds with flour and line bottom with baking paper. (either make small puddings or a large one)
  2. 2. Add the bottom of each mould/moulds evenly spread the golden syrup.
  3. 2. In a bowl beat the butter and sugar together until creamy.
  4. 3. Add the cinnamon, vanilla and eggs. Mix well.
  5. 4. Stir in the dates.
  6. 5. Sift the self-raising flour and bi-carb into the mixture and mix until well combined.
  7. 6. Gradually pour in the milk and mix well.
  8. 7. Pour mixture into moulds and cook in the oven for approximately 30-45 minutes for small puddings and 1 hour for a large pudding. It will be slightly firm to touch.
  9. 8. Stand puddings/pudding for 10 minutes before turning out.
  10. 9. To make butterscotch sauce heat the cream and sugar in a saucepan until sugar is dissolved. Slowly add the butter and whisk until butter has melted and sauce becomes smooth and has thickened slightly.
  11. 10. Serve puddings immediately with butterscotch sauce and cream or ice cream.
